Healthy Breakfast Recipes
Let's be honest, it's hard to make time for breakfast; but setting aside 15 or 20 minutes every morning can greatly improve your day. According to Daphne Oz in her book "The Dorm Room Diet", "[having breakfast] ensures that your body won't go into starvation-preservation mode and also provides your body and brain with energy so you can be on the top of your game." (p.82) So for when you're thinking about skipping breakfast here are two quick, delicious and healthy recipes to keep you on the top of your game.
Scrambled Eggs with Peanut Butter Toast, Strawberries and Orange Juice.
Ingredients:
- 2 eggs
- 1 slice of american cheese
- 1 slice of bread (of your choosing)
- 1 tbs of peanut butter
- 3 strawberries
- Orange juice
Total Calories: 427 (depending on type of bread: I used white/wheat)
Prep Time: 5-7 Minutes
Chocolate Chip Pancakes with Strawberries
Ingredients:
- 1/2 cup of Bisquick baking mix
- 1/4 cup of milk
- 1 egg white
- About 30 semi-sweet chocolate chips
- 1 cup of chopped strawberries
